Queremos Pastel!

Yesterday when we went to the grocery store, we found a box of brownie mix. Another American lady walked up at the same time and wanted the brownie mix too. Of course, only one box. We have some banana bread and so I told her to go ahead and take the mix and we would get it the next time. She was grateful because some friends had asked her to make brownies. Today, we returned to the grocery and checked for the mix. None BUT the girls asked to make a cake. They selected a "Party Confetti" cake with "matching" icing. Yum! Now, we don't have a mixer in our kitchen and we don't have a plate to turn the cake out onto, but we made it work. HV and HM were the chefs and were quite proud of their cake after dinner tonight. No, it isn't the prettiest thing. It was probably still a bit warm when we tried to frost it, but who cares. It still tastes good and the girls were happy with it.

And the finished masterpiece! Yes, that's a bit of frosting on HV's lips. They HAD to taste it, you know.
I did make the kids wait until after dinner to have cake. Tonight we had BBQ chicken, corn on the cob, and black beans.
I'm happy to report that we have no leftovers tonight. HG even asked for more pollo/chicken which is quite surprising because she isn't crazy about meat. She LOVED the black beans, however, and had 3 helpings of those. She even wanted to drink the black bean "juice" that was leftover. (No, I didn't let her). She wasn't sure what to do with the "elote"/corn, but she did try it at least. HV and HM said that this was the best meal yet because it reminded them of home. I think we are all missing home a bit when BBQ chicken prepared in the oven reminds you of home, don't you think? I did have to call J several times for cooking assistance. She would have been proud with the end result, I think.
